Tips on brewing acidic/nutty coffee the way you want

After several experiments, I realised the way to brew a coffee to avoid having too acidic or bitter coffee

For acidic coffee beans

  • Grind finer
  • Higher water temperature
  • Pour slowly

For bitter coffee beans:

  • Grind coarser
  • Lower water temperature (85 or below)
  • Pour normally

Brewing note:

  • 90degree
  • Three sections

Tasting note:

  • Smells floral
  • Juicy with a bit of sweetness
  • Better use higher temperature, and grind finer, brew slower

  • 90degree

Tasting note:

  • Juicy, plumy
  • Smooth at first

% Arabica – House Blend mixed

Brewing note:

  • 20g beans, 310ml water
  • 88 degrees Celsius
  • Saturate the grounds, wait 30s, pour in spiral until 180ml, pour in the centre only until 310ml

Tasting note:

  • Rich
  • Bright
  • Smoky
